Making your own kombucha

Ooh it's been such a long time since I've made kombucha, probably a decade but it's something I've been thinking a lot about recently too! I do miss making it.
My problem was always that the process felt like a runaway train. Like it would produce more and more kombucha faster and faster until it would completely overwhelm me and I would quit. Maybe if I had been pulling layers off my scoby as I went along that would have slowed it down and made it feel manageable? 🤔 just thinking out loud here...
I'm definitely interested in getting back into it and I don't remember much about the process so I hope someone here who makes it can enlighten us both! 😃
